One Pot Recipes – Easy Stove Top Beef Stew
Living on the road with a small kitchen is a challenge when I want to feed the family something that is a) Tasty b) simple and c) does not dirty every dish we own. I had to get creative and come up with these one-pot recipes to make my life easier. Even if you have a full-size kitchen, you will no doubt love this simple dish that cuts down on kitchen mess.
One Pot Recipes – Easy Stove Top Beef Stew
One of my favorite items to cook one pot meals in are my enabled cast iron dutch ovens. In my stick and bricks house, I had 4 of them! When we moved to the RV, I went down to 1 and gave the rest to friends and family. I love them because I can cook on my stove top with them and then slip them in the oven as needed and it's one less pan I have to clean up!
So hop on the less mess wagon and join me!
Ingredients:
10 ¾ oz. can of cream of mushroom soup
1 pound of ground beef
1 small onion
3 – 4 carrots
5-7 small or medium red potatoes
1 teaspoon black pepper
1 teaspoon garlic salt
½ teaspoon dried ground mustard
2 tsp. Vegetable oil
Directions:
First wash, peel and chop carrots and potatoes into small bite-size pieces, Â if you prefer you can leave the skin on your potatoes it adds more flavor just wash well first, the set-aside.
Peel and finely chop onion.
Combine onion and vegetable oil in a large saucepan over medium heat, saute, often stirring until onions start to become translucent.
Add ground beef, continue to cook over medium while breaking it up well with a wooden spoon as it browns.
When ground beef is just about done add in mushroom soup, chopped carrots, potatoes, garlic, salt, black pepper and powdered mustard- stir well.
Cover reduce heat to medium-low and simmer for 20-25 minutes until potatoes are fork tender, stirring it occasionally.
Serve as is or over rice (that’s how hubby enjoys it).
